How to Make Cassava Fufu (Akpu)

2kg Ayoola Cassava Flour (Fufu) (pre-made cassava fufu dough)
6 cups Water (for cooking)
to taste Salt
1-2 tbsp Butter or Margarine (optional, for richness)

Method

  1. Boil 6 cups of water in a large, heavy-bottomed pot. Add salt to your taste — cassava fufu needs good seasoning at the base.
  2. Once the water is rolling, gradually add the Ayoola Cassava Fufu flour in small portions — start with about 1/3 of the 2kg package. Stir very well with a strong wooden spoon or sturdy whisk to break up any lumps as the flour hits the hot water.
  3. Add the second 1/3 of the cassava flour and stir well for 2-3 minutes, making sure there are no lumps. The mixture will start to thicken noticeably at this stage.
  4. Add the final portion of cassava flour and stir continuously. The mixture will now be very thick and heavy — this is where you need real strength! Stir for 5-10 minutes, scraping the bottom and sides of the pot to prevent sticking and burning. The fufu is ready when it’s smooth, elastic, and pulls away cleanly from the sides and bottom of the pot.
  5. If the fufu is too thick, add a splash of hot water and stir in well. If it’s too thin, continue stirring over the heat for a few more minutes to allow excess moisture to evaporate.
  6. Optional: stir in 1-2 tablespoons of Blue Band Margarine for a richer taste and smoother texture.
  7. Turn the fufu onto a wet plate or into a wet bowl, using a wet spoon to shape it into a smooth dome or ball. Wet utensils stop the hot fufu from sticking.
  8. Serve hot with your choice of soup — egusi, pepper soup, okra soup, or light Nigerian peppersoup are all traditional and delicious pairings.

Tips & Variations

  • The key to perfect fufu: Stir constantly and vigorously. Don’t be shy — cassava fufu needs elbow grease! If you skip this, you’ll end up with a lumpy mixture.
  • Consistency matters: Cassava fufu should be smooth and stretchy, like warm silly putty. It should pull away from the pot sides easily. If it’s too stiff, add hot water a tablespoon at a time. If it’s too soft, keep stirring over gentle heat.
  • Make ahead tip: You can prepare cassava fufu ahead of time and reheat it. Just add a splash of hot water when reheating and stir well to restore the smooth texture.
  • Storage: Leftover cassava fufu can be refrigerated for up to 3 days. Reheat gently with a little water and stir until smooth again.
