How to Make Beef Tozo Suya

You’ll find it at Nigerian parties and celebrations all across the UK, a showstopper at every gathering, though it’s equally perfect for Sunday lunch or a spontaneous weeknight feast.

The beauty of Suya is in its simplicity and boldness. The beef melts in your mouth, the spice sings with chilli and ginger notes, and that smoky char from the grill ties it all together. 1.5 kg Beef Tozo Suya (thawed if frozen)
3-4 tbsp Awuf Suya Spice (ground, for coating)
2 tbsp Africa Finest Suya Pepper Mix (Yaji) (adds depth and heat)
2 medium onions Fresh Red Onions (sliced into rings for serving)
2-3 tbsp Vegetable Oil (for basting and coating)
2-3 tomatoes Fresh Red Tomatoes (sliced for garnish)

Method

  1. Remove the frozen Beef Tozo Suya from the freezer and thaw in the refrigerator for 2–3 hours (overnight is even better). Pat the thawed meat dry with kitchen paper to ensure the spice coating adheres properly.
  2. In a shallow bowl, combine 3–4 tablespoons of Awuf Suya Spice with 2 tablespoons of Africa Finest Suya Pepper Mix. Mix well to blend the spices evenly.
  3. If your beef tozo is not already skewered, thread the pieces onto metal or pre-soaked wooden skewers, leaving a little space between pieces so they cook evenly.
  4. Brush each piece of beef lightly with vegetable oil on all sides, using about 1–2 teaspoons total.
  5. Generously coat the oiled beef with the suya spice mixture, pressing gently so the spices stick to the meat. Don’t be shy — this is where the flavour lives. Sprinkle any remaining spice over the pieces.
  6. Heat your BBQ grill or cast iron pan to high heat (about 8–10 minutes for a grill). The grill should be hot enough that you can hold your hand 3–4 inches above it for only 2 seconds.
  7. Place the spiced beef tozo skewers on the hot grill. Cook for 6–8 minutes on each side, turning occasionally and basting lightly with more oil if needed. You’re looking for a beautiful smoky char on the outside while the beef remains tender inside. Total cooking time is usually 12–16 minutes.
  8. While the beef grills, slice your fresh red onions into rings and halve the fresh red tomatoes lengthwise.
  9. Transfer the cooked Beef Tozo Suya to a serving platter. Arrange the fresh tomato halves and onion rings alongside the hot meat for that authentic market-stall presentation.
  10. Serve immediately while the meat is hot and the spice crust is still at its peak. This is how it tastes best — fresh off the heat.

Tips & Variations

  • If the beef tozo arrives pre-skewered, you can skip straight to coating — no need to remove it from the sticks unless you prefer to.
  • For extra heat, add a pinch of ground habanero pepper or fresh Cameroon pepper to your spice mix. This dish should be bold and fearless.
  • Suya is best eaten hot and fresh off the grill, but can be made a few hours ahead and served at room temperature for larger gatherings and parties — it’s still delicious.
  • Pair with ice-cold Fayrouz (product 9987) or your favourite drink to balance the warmth of the spices.
